Chili Stuffed Zucchini

Servings: 1

Ingredients:

1 packet Ideal Protein Vegetable Chili Mix

1 Zucchini (2 cups worth)

Directions:

Preheat oven or BBQ to 350 degrees

Cut zucchini lengthwise and gently scoop out some of the center to make room for the chili.

Bake or BBQ zucchini until tender, about 10-15 minutes.

Meanwhile, prepare Vegetable Chili Mix per packet instructions and keep warm.

When zucchini is ready, scoop the prepared chili into the center of the zucchini.

Serve and enjoy!
